Method |
- 500g lamb mince
- 1 red onion, finely chopped
- 1/2 cup firmly packed fresh continentalparsley leaves
- 3 garlic cloves, crushed
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1 tbs tomato paste
- 35g (1/2 cup) fresh breadcrumbs (made from day-old bread)
- 1 egg, lightly whisked
- Salt & freshly ground black pepper
- 300g feta
- 125g spinach
- 75g (1/2 cup) plain flour
- 2 tbs olive oil

Step 1: Combine the lamb, onion, parsley, garlic, cumin, coriander, cinnamon and tomato paste in a large glass bowl

Step 2: Add the breadcrumbs and egg then stir until well combined and season with salt and pepper

Step 3: In a separate bowl combine feta and spinach

Step 4: Roll spinach and feta combination in 1 cm balls using your hands

Step 5: Roll lamb mixture into balls and then flaten and wrap around spinach and feta ball, ensure the meat covers the entire ball

Step 6: Place flour in a plate/tray and roll lamb balls in flour and shaked off any excess

Step 7: Place 1/2 the oil in a pre-heated frying pan and fry off 1/2 the balls, once cooked transfer onto a paper towl and repeat for remaining balls\

These meatballs are nothing short of sensational!! Made them on Sunday and they were such a crowd pleaser
